Crockpot Honey Garlic Chicken

Ingredients

  • 6 boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 1/3 cup honey
  • 1/2 cup low-sodium ketchup
  • 1/2 cup coconut aminos (or soy sauce)
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley
  • 1/2 tablespoon toasted sesame seeds

Directions

  1. Place the chicken thighs in the bottom of your slow cooker.
  2. In a mixing bowl, whisk together garlic, honey, ketchup, coconut aminos, oregano, and parsley until fully combined.
  3. Pour the sauce evenly over the chicken thighs.
  4. Cover and cook on LOW for 4–5 hours or on HIGH for 3–4 hours.
  5. Once cooked, spoon the sauce over the chicken to coat.
  6. Sprinkle with toasted sesame seeds and serve warm.

Notes From My Kitchen

This recipe is incredibly flexible. It’s delicious served over rice for a classic dinner, but it also works beautifully as shredded chicken for sandwiches or meal prep bowls.

If you don’t have coconut aminos, soy sauce works perfectly as a substitute. I also skipped the garlic and sesame seeds in my version, and it still turned out full of flavor.
