Stuffed Spinach Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt (divided)

Spinach Cream Filling

  • 4 oz cream cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 1/2 cups fresh spinach, chopped
  • 1 teaspoon minced garlic
  • 1/2 teaspoon red pepper flakes

Directions

  1. Preheat oven to 425°F.
  2. Place chicken breasts on a cutting board and drizzle lightly with olive oil.
  3. In a small bowl, mix paprika, onion powder, garlic powder, and half of the salt. Rub seasoning evenly over both sides of the chicken.
  4. Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through.
  5. In a mixing bowl, combine cream cheese, parmesan, mayonnaise, spinach, garlic, and red pepper flakes. Stir until fully blended.
  6. Spoon the filling evenly into each chicken breast pocket.
  7. Place stuffed chicken into a greased 9×13 baking dish.
  8. Bake uncovered for 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  9. Remove from oven and let rest for a few minutes before serving.

Notes From the Kitchen

For extra flavor, make sure to season inside the chicken pockets as well as the outside. If you’re working with thicker chicken breasts, you can carefully create a double pocket to hold more filling and ensure even cooking.

Tips & Tricks

Don’t Rush the Filling

Make sure the cream cheese is softened so everything mixes smoothly and spreads easily inside the chicken.

Secure If Needed

If your chicken opens too wide, use toothpicks to help keep the filling in while baking.

Customize the Heat

Red pepper flakes add a gentle kick, but you can reduce or increase them depending on your preference.

Add Extra Cheese

A little shredded mozzarella or extra parmesan on top before baking adds a golden, cheesy finish.
